First of all, I'm not that luxurious. If you thought I was, then I'm sorry to say that I'm not. If you are expecting daily recipes with truffle mushrooms or saffron or caviar (according to Metro, those are some of the most expensive foods money can buy), then you have come to the wrong food blog, my friend. My niche is grain free, dairy free and refined sugar free recipes!
Secondly, blech, I don't think I'd ever be able to bring myself to try the so-called delicacy. Fish eggs? NO THANK YOU. Not on my watch. Blueberry and chia, however? Yes yes yes!
Jam: crushed fruit cooked in sugar until it looses it's shape and becomes spreadable
Jelly: crushed fruit in sugar strained in a jelly beg to create a "crystal-clear" consistency
Conserve: jam with various fruit
Compote: fruit cooked in sugar syrup to maintain their shape
Marmalade: jelly with fruit rind in it
Fruit butter: fruit pulp cooked in sugar for a long time to become dense
Preserve: fruit stored in it's own juices or a syrup
I still don't know what to consider it. After all, there's no sugar in it, no pectin, and I'm too lazy to cook anything for a long time. Can I just call it a blob? Is that acceptable? Thumbprint cookies with blueberry chia blob. How does that sound? There's sort of a ring to it, dontcha think? Who am I kidding, I'll just call them blueberry-chia thumbprint cookies. It solves all problems.

For the cookies
- 1 + 1/4 cup almond meal
- 1/4 cup coconut oil, softened
- 1 tbsp. honey
- 1/2 tsp. vanilla extract
- pinch of salt
For the topping
- 1 cup frozen blueberries
- 2 tbsp. chia seeds
- 1/2 tsp honey
- With your hands, mix almond meal, coconut oil, honey, vanilla and salt until you form a ball.
- Chill for 30 minutes in the fridge.
- While it's chilling, heat the blueberries and honey in a small saucepan over medium heat, stirring for a few minutes until soft and warm (about 3 minutes).
- Add the chia seeds and stir frequently, allowing to thicken (this will take about 8 minutes).
- Remove from the heat and allow to cool.
- Once dough ball is chilled and blueberry mixture is cool, shape cookies into 1" balls and make an indentation with your thumbprint. Fill it with about 1 tsp of the blueberry mixture.
- Place cookies on a parchment lined baking sheet and bake at 350 for 7-9 minutes.
